to cook or not to cook



what do we cook today?

my man's off on a trip to calcutta and cooking for just myself
is not my favourite thing to do. and yet, eat i must.

i am going to take a while to make up my mind.
meanwhile, allow me to share some of the recipes i am considering.

eggs benedict from thepioneerwoman, without the bacon. so maybe i'll try her version of eggs florentine that follows.

or i could marinate some mozzarella
and eat it with multi-grain crusty bread like tim

i could even try this simple zucchini pasta
with almonds and lemon zest from here.

what do you recommend?

while i make up my mind, this is what i am going to indulge in.
good old pancakes that i have shared before.

take a cup of flour (leveled not heaped).
a cup of milk. 2 tbsp. sugar and butter.
(if you are using unsalted butter, sprinkle some on later.)
1 tsp. baking powder and 1 (large) egg.

mix all the dry ingredients. then mix all the wet ingredients separately.
now mix the two together, don't whisk it too much.
let rest for five ten minutes.

heat a flat pan. butter it up.
pour around half a cup or so of pancake batter.
when you see bubbles on the surface, it is time to flip it.
let cook for another minute and it should be ready.

make it even more delicious with honey, maple syrup, fruit compote or just fruits.



p.s. i have uploaded an image from pinterest, because really, do you expect me to be patient enough to dress my pancakes and click pictures before i devour them?
